Chicken Cacciatore

This is by far one of my favorite recipes of all time because it's incredibly delicious and incredibly easy. This particular recipe is for a Crock Pot preparation, so fire up the stone, go about your day, and come home to dinner!

This recipe is great for weight loss when eaten inside or outside the Metabolic Window.


Whole chicken or chicken quarters (or any bone-in pieces), skinless

2 cans tomato paste (glass jars)

2 cans stewed tomatoes (glass jars)

4-5 portobello mushrooms, sliced

3 tbsp Italian seasoning

Onion powder, garlic powder to taste

1/2 cup water


Arrange chicken or pieces in bottom of Crock Pot.

Add water, tomatoes, paste and mushrooms.

Season to taste.

Cook on high 4 hours or low 6 hours, or until internal temperature reaches 165 degrees.

Serving suggestions:

With veggies (broccoli or an Italian blend of squashes and other veggies) outside Metabolic Window

Over whole grain pasta or rice inside Metabolic Window.
