Banana Pancakes

The special occasion tradition in my house was fun-shaped pancakes. Mom made hearts on Valentine's Day, bunnies during spring and Mickey Mouse before a trip to Disney. Unfortunately, pancakes have no business being a staple in any health-conscious diet... until now! This simple, yummy recipe makes a fantastic weekend tradition, and is easy enough to liven up even the most boring of weekdays.

Note: This recipe makes 4-6 medium sized pancakes.

This recipe is great for weight loss when eaten inside or outside the Metabolic Window.

Ingredients:

1 medium, semi-ripe banana

2 eggs

Directions:

Blend eggs and banana in Magic Bullet or similiar blender until smooth and creamy.

Pour over skillet into 2-3" cakes.

When tops become bubbly, flip. Use caution, as pancakes will be very delicate!

Allow to cook an additional minute and remove from heat.

Tip: The nature of the recipe means these pancakes will be extremely delicate and will brown easily. They aren't burned just because they are brown! Enjoy!
