Spinach Quiche

Spinach Quiche

Clients tell me all the time how difficult it is to get breakfast in the morning - let alone a meal of any semblance of health. I love explaining how simple and easy (and yummy!) a healthy breakfast meal can be. There’s no question that breakfast is essential to helping you reach your goals, and this quiche recipe has a great balance of fats, proteins and carbs to start your day off right.

Tip: This can be made “to serve” or (my favorite) cooked into muffin tins and frozen for an easy grab in the morning. Just microwave and enjoy!

This recipe is great for weight loss when eaten inside or outside the Metabolic Window.

Ingredients:

1 10-oz package chopped, frozen spinach (or – your favorite veggie or blend)

1 bunch green onions, chopped

4 eggs + 1 cup egg whites

1 16-oz container cottage cheese (I like Kalona or Daisy brands)

Optional: 2 cups grated cheddar cheese (use ½ - 1 cup or none if weight loss is your goal)

Directions:

Cook spinach according to package directions and squeeze to remove liquid.

Combine with other ingredients, reserving crouton crumbs for the top.

Pour into a quiche pan, 10-inch pie plate, or muffin tins.

Either freeze until desired cook time, or bake immediately at 325 degrees for one hour.
