Recipe of the Week: Coconut Brownie Bites

Since we've been focusing on meal prepping ideas this week, here's a great treat you can add to your prep!

These little fudge brownies would be great as a quick treat that won't completely throw off your meal plan. Just be careful not to eat all of them at once ;)

Also, if you're looking for a healthier alternative to some of those school snacks, toss one of these into the kiddo's lunchboxes in the morning.

Here's what you need...

  • 7 oz. dark chocolate
  • 1 cup coconut oil
  • 3/4 cup raw honey*
  • 4 eggs
  • 2 tablespoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1 1/2 cups blanched almond flour
  • 3/4 cups unsweetened shredded coconut
  • 1 teaspoon sea salt
  • 1/2 cup mini chocolate chips

*You can substitute the honey for equal parts maple syrup

Instructions:

  • Preheat oven to 350 degrees F. Lightly grease a mini muffin pan with coconut oil.

  • In a double boiler, gently melt the chocolate, coconut oil and raw honey. Remove from heat, allow to cool, add the eggs, vanilla and almond extracts.

  • In a medium bowl combine the almond flour, coconut and salt. Add the wet ingredients and mix well. Mix in the chocolate chips.

  • Fill the mini muffin tins nearly to the top. Bake for about 15 minutes, until golden and set. It’s OK for the middles to be a moist, this is the best part!

  • Store in an airtight container in the fridge. Enjoy!
