Recipe of the Week: Berry'n'Beet Smoothie

You may be thinking: "Why in the world would I ever add beets to my smoothies?"

To be fair, a lot of those healthy smoothies on the market seem to have some pretty outlandish combinations- but this is pretty tame.

As any pro-smoothie maker will tell you, berries are a great way to mask the flavor of any less-than-delicious ingredients.

If you're still not sold on the smoothie, look up all the health benefits of beets. They just can't be "beet"! ;)

Serves: 4 (a serving is about 1.5 cups)


What you'll need...

  • 1 1/2 cups unsweetened almond milk
  • 1/4 cup fresh orange juice (from 1 orange)
  • 2 cups stemmed, coarsely chopped beet greens (from 1 bunch)
  • 1 1/2 cups frozen mixed berries
  • 1 medium, raw beet peeled and cut into wedges
  • 1 medium, frozen banana, broken into large chunks


  • Place almond milk and juice in a blender; top with beet greens, berries, beet, and banana.
  • Start blender at lowest setting and gradually increase to one-third power; process for 30 seconds.
  • Increase to half power; process 30 seconds, or until very smooth
  • Let mixture stand 1 minute before serving


One Serving Equals: 84 calories, 1.5g fat, 2g protein, 18g carbs, 4g fiber, 127mg sodium, and 111mg calcium
